Strawberry and Rose Lassi
2 cups (500ml) natural Greek-style yoghurt
150g strawberries, hulled, chopped
¼ cup Roo Hafza (rose syrup)
2 teaspoons white sugar
Ice cubes and fresh rose petals, to serve
Spiced Pistachio Crumb
2 tablespoons pistachios
½ teaspoon cardamom
To make the spiced pistachio crumb, place the pistachios and cardamom in a pestle and mortar and pound to a fine crumb. Set aside.
Place the yoghurt, strawberries, rose syrup and sugar in a blender. Blend until smooth.
Serve in tall glasses over ice, sprinkled with rose petals and the spiced pistachio crumb.
