Strawberry and Rose Lassi


(Makes 2)

  • 2 cups (500ml) natural Greek-style yoghurt

  • 150g strawberries, hulled, chopped

  • ¼ cup Roo Hafza (rose syrup)

  • 2 teaspoons white sugar

  • Ice cubes and fresh rose petals, to serve


Spiced Pistachio Crumb

  •  2 tablespoons pistachios

  • ½ teaspoon cardamom


STEP 1.    

To make the spiced pistachio crumb, place the pistachios and cardamom in a pestle and mortar and pound to a fine crumb. Set aside.

STEP 2.    

Place the yoghurt, strawberries, rose syrup and sugar in a blender. Blend until smooth.

STEP 3.    

Serve in tall glasses over ice, sprinkled with rose petals and the spiced pistachio crumb.
